Lemon Juice Beef Stew

Ingredients:

  • Angus beef 4-5 lbs. cubed
  • 1/3 cup freshly squeezed lemon juice or apple cider vinegar
  • 1/3 cup soy sauce
  • 3 bay leaves
  • 1 tsp. black pepper freshly grounded
  • Garlic diced or garlic powder
  • 1 Onion cubed
  • 2 Carrots cubed
  • 1 Potato cubed

Directions:

  1. Put beef, lemon juice, soy sauce, and spices in a pot
  2. Marinate for a minimum of 1 hour
  3. Bring to a boil, lower temp
  4. Cover and let simmer for 30 min
  5. Add onion, carrots, and potato
  6. Uncover if needed, stir occasionally until sauce is reduced and thickened for about 20 min
  7. Enjoy
